Step 1

Freshly mill your einkorn wheat berries until you have 2 ¼ cups of flour. For a lighter, more tender biscuit, you may sift out some of the coarser bran.

2 1/4 cup Freshly milled einkorn flour

Step 2

In a large mixing bowl, whisk together the freshly milled einkorn flour, 1 ¼ cups of the organic all-purpose flour, baking powder, sugar, and salt. Reserve the remaining 1 cup of flour to add gradually.

2 1/4 cup Organic all-purpose flour

2 tbsp Baking powder

2 tbsp Organic cane sugar

1 1/2 tsp Sea salt

Step 3

Place the butter in the freezer for about 10 minutes before beginning. Cut the very cold butter into the flour mixture using a pastry cutter or fork until the mixture resembles coarse crumbs with small pieces of butter throughout.

12 tbsp Cold salted butter

Step 4

Pour in the cold buttermilk (or whole milk) and gently mix until the dough begins to come together. Gradually add the reserved cup of flour, a little at a time, until the dough is soft, moist, and workable. You may not need all the flour. Avoid overmixing.

1 1/2 cup Cultured buttermilk

Step 5

Turn the dough onto a lightly floured surface. Gently bring it together with your hands. If it feels overly sticky, lightly dust with additional flour until manageable.

Step 6

Fold the dough in half over itself and gently flatten. Rotate the dough 90 degrees and repeat. Do this 5–6 times, taking care not to overwork the dough. These folds create beautiful, buttery layers.

Step 7

Using your hands rather than a rolling pin, gently flatten the dough to approximately 1 ½ inches thick. Lightly flour a 2 ½-inch round biscuit cutter or glass and cut straight down without twisting.

Step 8

Arrange the biscuits close together in a glass or porcelain oven-safe baking dish. Place in the freezer for 5 minutes to help the butter stay cold and encourage a taller rise.

Step 9

Preheat your oven to 425°F. Bake for 15–22 minutes, or until the biscuits have risen beautifully and the tops are golden brown.

Step 10

Enjoy fresh from the oven with homemade cultured butter, homemade jam, or a drizzle of honey.

Notes

  • 100% Fresh-Milled Flour Option: These biscuits can be made with 100% freshly milled flour instead of a combination of fresh-milled and all-purpose flour. You may need to adjust the liquid to achieve a soft, moist dough that is easy to work with.
  • Add Flour Gradually: Always add the final cup of flour slowly, a little at a time, until the dough reaches the right consistency. Freshly milled flour varies in moisture absorption, so you may not need all the flour. The dough should be soft and slightly tacky, but not overly sticky or dry. Avoid adding too much flour, as this can result in dense biscuits.
  • Freshly Milled Einkorn: Einkorn has a more delicate gluten structure than modern wheat. Avoid excessive kneading to preserve a tender texture.
  • Cold Butter Is Essential: Keeping the butter cold helps create flaky layers as the biscuits bake. For the best results, use cold butter and cold buttermilk.
  • Buttermilk or Whole Milk: Cultured buttermilk provides a slightly tangy flavor and tender crumb, but whole milk can be used as a substitute.
  • Handle Gently: The less you work the dough, the more tender your biscuits will be. Fold gently and avoid twisting the biscuit cutter, which can seal the edges and prevent a tall rise.
  • Room Temperature: Store cooled biscuits in an airtight container for up to 2 days.
  • Refrigerator: Store in an airtight container for up to 5 days.
  • Freezer: Freeze baked biscuits for up to 3 months. Reheat in a 325°F oven until warmed through.
  • Make Ahead: Cut the unbaked biscuits and arrange them on a parchment-lined baking sheet. Freeze until solid, then transfer to a freezer-safe container. Bake directly from frozen at 425°F, adding a few extra minutes to the baking time as needed.
