Place the chicken bones and skin in a large stockpot. Add the onion, carrots, celery, bay leaves, and fresh herbs, if using. Add 10–12 cups of water, or enough to cover the bones and vegetables. Add the salt, if desired.

Canning note: These processing instructions are specifically for strained chicken stock or broth. Do not leave the carrots, celery, onions, chicken, or other solids in the jars when using these processing times. Follow a separately tested soup-canning recipe if you want to preserve broth with solids.

Tip: Save chicken bones and scraps in a freezer bag throughout the month. Once you’ve collected enough, make a large batch of broth and pressure can it so your pantry stays stocked.
