Step 1
Preheat the oven.
Step 2
Place the butter in a 9x13-inch heavy glass baking dish and set it in the oven. (You may double the recipe and use a 15 inch cast iron pan to feed a whole family.)
1/2 cup Butter
Step 3
Preheat to 400°F.
Step 4
Make the batter.
Step 5
In a blender, combine milk, eggs, vanilla extract, einkorn flour, and sugar if using. Blend until smooth.
2 cup Milk
5 Eggs
1 tsp Vanilla extract
1 1/2 cup All-purpose einkorn flour
Powdered sugar
Step 6
Melt the butter.
Step 7
Once the butter is fully melted (but not browned), carefully remove the hot dish from the oven.
Step 8
Pour the batter into the baking dish over a metal spoon (this helps prevent splashing and keeps the butter from separating too harshly).
Step 9
Bake for 20-30 minutes, or until the center is set and the edges are puffed and deeply golden.
Step 10
Remove from the oven. Immediately squeeze fresh lemon juice over the top and dust generously with powdered sugar.
1 Lemon
Step 11
Serve warm, straight from the pan.
