This soup is very forgiving—add extra broth if you prefer it thinner or let it simmer uncovered for a thicker, stew-like consistency. It freezes beautifully. Let cool completely and store in glass containers for up to 3 months. For a slower, deeper flavor, simmer up to an hour on very low heat.
