Skillet Creamy Chipotle Chicken Enchiladas

Turn cooking mode on

Step 1

Cook the chicken: In an oven-safe skillet, mix chopped onions with chicken breasts. Season the chicken with smoked paprika, garlic powder, and salt. Add chipotle chiles in adobo to taste, then pour over a can of diced green chiles and red enchilada sauce. Simmer until the chicken is fully cooked and shreds easily.

Notes

  • Use chipotle chiles to your taste so the sauce is not too spicy or not spicy enough.

  • For a perfectly creamy sauce, use cream; whole milk or canned coconut milk also work well.

  • Serve topped with fresh slices of avocado, a dollop of plain Greek yogurt, fresh cilantro, green onions, and limes.

  • You could do half cream, half yogurt for a little tang; use about 1/2 cup of yogurt.

  • Beans would be a great option instead of chicken.

  • Use heavy cream for this recipe.

  • Use my recipe for tortillas an enchilada sauce!
