Notes

These doughnuts are best filled immediately before serving.

Once filled, the soft yeasted dough and fresh vanilla cream are at their best the same day they’re made.

  • Dough: Refrigerate for 6–15 hours before shaping.
  • Pastry cream: Prepare and refrigerate for at least 4 hours or up to 3 days.
  • This makes it easy to prepare both components the day before, then roll, rise, fry, coat, and fill the doughnuts the following day.

Instead of a conventional seed oil, these doughnuts are fried in algae cooking oil. It works well for high-heat cooking and brings a subtle buttery flavor that pairs especially well with the soft dough and vanilla cream.
