Notes

Horseradish may be substituted for ginger. If after 24 hours the vegetables are not fully submerged, prepare additional brine (dissolve 1 tablespoon sea salt in 1 liter water) and add just enough to cover. Once the flavor is sufficiently tangy, remove the weight, seal the jar with a lid, and store in the refrigerator. The kraut can be eaten immediately or kept refrigerated for several weeks.
